Today, Condé Nast Traveler joins Chef Kelvin Cheung in Dubai to try his favorite dishes at Hashmi Barbecue. Hashmi is a Kenyan spot with a secret sauce so good the city’s pro chefs can’t stop talking about it.

This Kenyan barbecue restaurant has a secret sauce

made from Indian spices that is so good

that it has chefs across the city obsessing over it.

I'm Chef Kelvin Cheung,

and today we're at Hashmi Barbecue,

one of my favorite restaurants in Dubai.

And here are three dishes that you must try.

[upbeat music]

To start our meal, we're gonna start off with a chooza.

It's the most beautiful, smoky, charred Pandora chicken.

Instead of using that classic tender masala mix,

they do their own blend using those Kenyan spices as well.

Ah, yeah, look at that.

It falls right off the bone.

Hmm.

A little bit crispy on the outside, but so tender and juicy

still on the inside.

You get that nice, beautiful spice.

Some acidity in the background.

Somehow theirs is magically cooked perfectly every time.

The next dish we have is the Mutton Khima Chapati.

They've taken some fresh chapati,

stuffed it with this beautiful spiced mutton Khima,

dip it in egg, and they lightly seal it

so that it's just cooked.

You get that nice, crispy texture, and it's still fluffy

and gives you that almost late night ultimate snack.

Hmm.

You still get that flaky, crispy chapati.

It's like the perfect combination and perfect bite.

Finally, we have the Poussin.

This is the magical dish that comes with that secret sauce.

As much as I can figure out, they just take a fresh chicken,

throw it straight into the fryer,

and the moment it comes outta the fryer,

they dunk it in this vat of butter

and they cover it with this magical spice.

And the most beautiful part of this dish,

it always comes with these fries.

And these fries are soaked and drenched

in that butter, spicy sauce.

Look at that.

It's moist, it's juicy, it's tender.

Hmm, still crispy on the outside.

And the best part of this chicken, there's no batter,

there's no coating, all you get is that delicious chicken

that's just covered in that streak of sauce.

In case you needed something to cool off your mouth,

they make this beautiful Kulfi soft serve.
